CNY cookies

I attempted to make cookies this year for CNY.
My friends in Colorado puts me to shame by making all types of cookies this special time of the year, just as you would back home in Malaysia.


So in thinking of them and my mother, I attempted to make 2 types of cookies – jam tarts and pineapple tarts.

I searched through the internet and my friends’ recipe blogs for inspiration and made these.


Pineapple tarts.
Don’t look to good, eh? But they were yummy! Even Kathryn, the picky one like them.
I made the pineapple jam over the stove and stirred for over 1.5 hours.

The apricot jam was too heavy for my taste, but Chloe was loving these cookies

Oh yes, if you notice the small size of my baking pan and my baking rack, that is because I baked them in my little toaster oven.

The fact that you baked is good enough! :) And as a suggestion, get somebody to get you the pineapple tart moulds from malaysia! They will look perfect!! :)
